So, I opened my PC today, launched Edge, and noticed that all my pinned tabs were missing. I managed to restore them with Ctrl + Shift + T, but then realized the actual nightmare: I was logged out of literally every single account on every website.
Just to clarify:
I did NOT update the browser manually.
I did NOT download or install any new software/extensions.
I did NOT clear my cookies or cache.
Has anyone encountered this before? What could have caused Edge to completely wipe session cookies/auth data out of nowhere, and is there any way to prevent this phantom profile wipe in the future?

Your browser actually doesn't log you out of websites ... it's the websites themselves that do that.
To keep you logged in, the website has to maintain a connection to your computer, which means that someone else can't connect to that website. So when a website realizes (or decides) that you are no longer actively interacting with the website, you'll be logged out.
Many websites will write a cookie on your computer before they log you out. The next time you connect to that website, the website will read its cookie and restore your session. To you, it looks like you were connected all along, but what really happened is that you were logged out and then automatically reconnected.
This is also much safer than simply keeping you logged in, because if your connection to the website was hijacked while you were asleep, you wouldn't realize it.
So the thing to do is to make sure that you maintain cookies for the websites you want to continue using. Ultimately, it's the website that decides to keep you logged in.

This usually happens when Edge loads the wrong profile, the profile data becomes corrupted, or cookies are cleared during shutdown.
First, click the profile icon and confirm you are using your normal Edge profile. Then open edge://settings/privacy/clearBrowsingData/clearOnClose and make sure “Cookies and other site data” is turned off.
Also check edge://policy for ClearBrowsingDataOnExit. Security or cleanup software may also delete cookies automatically.
Update Edge at edge://settings/help. If it happens again, repair Edge through Settings > Apps > Microsoft Edge > Modify > Repair. Repairing Edge should keep your browser data: https://support.microsoft.com/en-us/edge/what-to-do-if-microsoft-edge-isn-t-working
Unfortunately, deleted login cookies cannot be restored, so the websites will need to be signed in again.
