Since you've already done the router/printer/PC restart and firmware/driver updates, the usual first-line fixes are out of the way. For a network Epson that keeps going offline despite good signal, two things are worth checking next:
1. Disable SNMP status on the printer port
SNMP is what Windows uses to "ping" the printer for its status. On a lot of network Epson units it misfires and reports the printer as offline even when it's perfectly reachable.
- Press Windows + R, type
control printers, press Enter - Right-click your Epson ET-3800 > Printer properties
- Go to the Ports tab > select the checked port > Configure Port
- Uncheck SNMP Status Enabled > OK > Apply
Try printing a test page. If status flips to Online and stays, that was it.
2. If the port is a WSD port, switch it to Standard TCP/IP
WSD ports are notorious for the printer going "offline" after the printer sleeps or after Windows updates. In Printer properties > Ports, if the port name starts with WSD, do this:
- Make sure the printer has a fixed IP (either set static on the printer's panel or reserve the IP in your router)
- In the Ports tab, click Add Port > Standard TCP/IP Port > New Port > enter the printer's IP
- After it's added, tick the new TCP/IP port for your printer and Apply
- Optionally remove the old WSD port
If it's still dropping after both, reply back with your Windows version (Win 10 / Win 11 + build) and how the printer connects (WiFi or Ethernet), and we can dig further.
